When I saw cupcakes, my eyes literally lit up. Nothing can be better than a fluffy and sweet piece of the cupcake to me. If someone asked me what my favorite cupcake is, the first thing that comes to my mind is the blackberry coconut cupcake. Trust me, and this is mouthwatering, super tasty, and delicious. Here I am sharing the recipe for a blackberry coconut cupcake:

Dough mixture

  • 2 eggs
  • 3 to 4 cup of flour
  • 1 to 2 cup sugar
  • 1/ 3 stick butter
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla extract
  • 1 tablespoon blackberry jam

For the icing

  • 1/ 2 stick soft butter
  • 1/ 2 cup cream Cheese
  • 1 cup icing sugar
  • 2 tablespoon coconut rasps
  • 1 tablespoon blackberry jam
  • Purple food color
  • Fresh blackberry

  • First, take an egg and whisk until foamy, then add other dough mixing ingredients.
  • Place the cake holder into the mold on the muffin tray, add a tablespoon of the dough mixture, add one teaspoon of jam, and then cover it with another tablespoon of the dough mixture. Bake it for 30 minutes at 320 F.
  • Prepare the icing, mix butter, cheese, and icing sugar in a huge bowl, and stir until they turn into an even mixture. Then spread it on the cupcakes, add some coconut rasps and BlackBerry jam, and a few food color drops.
  • Fill the cupcake step by step with coconut rasps and blackberry jam, and place a fresh blackberry on the top of the cupcake for a classy look.

The final step is to serve and enjoy the cupcake.
